		<description>EGLE: Good question. I&#039;m thinking you can carefully flip the omelet while it&#039;s on the stove top - it may not deflate. In this case, it&#039;s probably best if you didn&#039;t add the second round of cheese until your done cooking. Let us know how it works out.
