LAURA: No time to dehydrate your own fruit? What would Martha Stewart say? LOL. Actually that's a great question. Canned pumpkin probably wouldn't work - too wet/soggy. You really want the fruit to be chewy in a good granola. Maybe you can substitute the pumpkin for a commercially dried fruit - maybe apricots or dates. If you use a commercially dried fruit, you may need to reduce the sugar as they tend to be sweetened. This alternative is a little less 'pumpkin pie-ish' but the pumpkin spices and nutmeg should give you all of the pie inspired flavor that you're looking for.

Ok, I'll admit it...I'm pressed for time! Is there any way to make these without having to deconstruct and dehydrate the pumpkin? Say, with, um, something probably completely wrong and horrible, like canned pumpkin?

Just wondering...

Wonderful posts and photos that make me want to eat my Mac!

These look great. Since there are nut allergies and it's theme appropriate, it may be nice to substitute the almonds with some pepitas (pumpkin seeds!) that are easily found in many Latino markets. I look forward to trying the recipe.

MICHELLE: Thanks. I appreciate the kind words.
.
LIESL: This is my first stab at homemade granola bars. I will definitely try the again.
.
LORI: Thanks.
.
CLAIRE: Just don't let other shoppers witness you responding to the voices in your head. It makes for a very awkward situation. :)
.
BRITTANY: Oppps. hanks for pointing out that I left off the most important ingredient in the recipe...the pumpkin (the recipe has been fixed). On that note, the pumpkin is stirred into the mix at the same time as the cranberries. I'm surprised to hear about the length of time it is taking you to dehydrate the pumpkin. I guess the cooking time can vary. Let me know how long your dehydration process takes. It will be helpful to me and others who are going to give the recipe a try.

Hello,

I am new to the blog and absolutely love it! I am in the process of making these awesome looking bars as I type, but the only problem is...I don't see where the pumpkin comes into play?

My pumpkin has been in the oven for 3 hours and is still a bit crunchy, so I think I'll leave it for a bit. But once I remove it from the oven when do I add it to the mixture?

Thanks for your help!

This story made me smile :) I find shopping in chain stores exhausting for this very reason. I similarly have found myself listening to the voice in my head: "BACK AWAY FROM THE ORANGES!" lol.
