i just love chestnut its so warm and rich..i have never had chestnut soup this is sure on my must try list… lovely pictures and really nice recipe

MORTA DI FAME: That’s a good question. The soup can be a little grainy (straining it through a fine strainer really helps) and the cream does seem to help smooth that out. What about a diary substitute such as soy milk? I think that may work. Let us know if you give it a non-diary spin and how it works. Good luck.

Oppps! I’m a sucker. I just realized that I spelled Creme Fraiche wrong in the title. It’s “creme” not “cream.” Sloppy, sloppy, sloppy.

CHARLES: Thanks. And I’m trying my best to stay seasonal and local. But when it is freezing and there’s snow on the ground it’s very hard.

PHYLLIS: The only acceptable answer for making a soup smooth and creamy is to add tons of heavy cream. Or i guess, you can run the processed soup through a fine chinois but where’s the fun (or clogged arteries) in that.

Great soup! I have been scouring the globe look for chestnuts and creme fraiche (ok, maybe searching throughout Brooklyn), but you get the point. I look forward to trying this soup out…as soon as i find these exotic little gems.

Are you kidding?? As soon as I saw the word “chestnuts” my mouth started watering. I had to open this post. This soup sounds awesome. I too would finish it with the cream at the end. No need to boil it in. Your photos are gorgeous! The house must have smelled great. I tend to be a purist too….gotta get me some shelled chestnuts!

Another great dish, Reg. I love chestnuts, too. I only recently learned exactly how to roast them so they peel easily. They make a good snack, too. I wonder if you have any ideas about how to get a soup like roasted chestnut soup or mushroom to have that velvety texture.
