		<description>MORTA DI FAME: That&#039;s a good question. The soup can be a little grainy (straining it through a fine strainer really helps) and the cream does seem to help smooth that out. What about a diary substitute such as soy milk? I think that may work. Let us know if you give it a non-diary spin and how it works. Good luck.</description>

PHYLLIS: The only acceptable answer for making a soup smooth and creamy is to add tons of heavy cream. :) Or i guess, you can run the processed soup through a fine chinois but where&#039;s the fun (or clogged arteries) in that.

I too would finish it with the cream at the end.  No need to boil it in.  Your photos are gorgeous!  The house must have smelled great.  I tend to be a purist too....gotta get me some shelled chestnuts!</description>

I wonder if you have any ideas about how to get a soup like roasted chestnut soup or mushroom to have that velvety texture.</description>
