Love it, I made something similar a long time ago and was just thinking about it when I harvested a few leeks earlier this week. Thinking these will make the perfect breakfast tomorrow. I love that you can pretty much make something like this with whatever you happy to have around. I have some sun dried tomatoes still left from last summer's harvest and I think I'll add those. (I happen to have some of the Staub cast iron tiny cocottes).

PS and as long as you peel off the green part the potatoes are OK.

Looking at your pictures I saw that your potato is quite green. When potato is green it's high in toxic solanine and tastes bitter. You should keep your potatoes in cardboard box in dark place to prevent solanine forming.

Yum! I had a similar dish on a recent trip to NOLA. I fell in love and needed a good recipe. This was that and more--love the addition of the potatoes. My mother and I tested the recipe and were very happy with the results. Our eggs didn't look quite so pretty, but they were delicious! My brother dropped by for a visit and literally scoffed when we told him what we were making. The serving he begrudgingly tried, but didn't mind finishing, let us know it was a good dish. BUT the second ramekin that he sneaked away while we weren't looking was testament to the greatness! Definitely a welcome addition to our Christmas Brunch! Looking forward to trying more recipes!

ZOE: You know, there's nothing better than eggs, cream and bacon.
.
DIA: Thanks! That's high praise, coming from a CIA grad.

Wow, not a big egg eater, but it brought some memories back when I use to cook for my kids, practicing while in the Culinary Institute of America. You have a pretty nice website I just discovered it today!

Those ramekins with lids are the cutest! Great find ;) These are wonderful breakfast dishes that aren't a lot of work, but look fancier than plain 'ole eggs.
